Chefs are invited to learn strategies that will enhance flavor and reduce sodium.
The free session will be held Thursday, March 26, from 9 to 11 a.m., in the cooking school kitchen at Clark College Columbia Tech Center, 18700 S.E. Mill Plain Blvd., Vancouver.
It is sponsored by Clark County Public Health, with a federal grant from the Centers for Disease Control and Prevention.
Chef Garrett Berdan will focus on flavors from Mexico and Southeast Asia.
Berdan is a registered dietitian who offers workshops for professional cooks across the country. He has been recognized by the White House as a “Champion of Change.”
Berdan is past president of the Oregon Academy of Nutrition and Dietetics.
The training is geared for independent, locally owned restaurants. Registration is required.
